up to 2 oz honeysuckle syrup
juice of half a honeydew melon
1 bottle dry sparkling wine
optional: 6 oz rum (we use Flor de Caña)
Blend honeydew juice with a handful of ice and strain into a pitcher. Add an ounce of honeysuckle syrup to start— and rum if you’re feelin’ it— and stir with chilled sparkling wine. Honeydew melons vary in sweetness so slowly add honeysuckle syrup to taste. Serves 6.
2 c pressed
3 c water
1 c sugar
a wee bit of lemon juice
Boil water, then pour over blossoms in a mason jar, cover, and let steep for 12-24 hours at room temperature. Strain through a sieve. Bring to a boil, then reduce to a simmer. Allow the honeysuckle water to reduce to 1 cup. Take off heat, add sugar and stir until dissolved. Pour into a clean mason jar or glass cruet, add a bit of fresh lemon juice, stir, and let cool.
This syrup can be refrigerated for up to 2 weeks. If you want to be healthy while getting loose, you can replace the sugar with honey.
