The wafting scent of Lilac was a welcome surprise this late in the season, but I spied a late blooming bush at a local park, and couldn’t help but to clip some to make this Lilac-Honey syrup for our tea and gin based cocktail Grey Garden.

2 c rinsed lilac florets
Soak lilac in cold water for a few hours. I added blueberries (I used frozen this time) and simmer for 10 minutes., until the scent of lilac is released.
