skinny 1 oz simple syrup
1/8 oz Douglas Fir Eau de Vie
1 oz pisco (we use Encanto)
1 oz London dry gin (we use Junipero)
Combine all ingredients. Add ice and stir. Drizzle bitters on top. Express a lemon peel over the drink and insert into cocktail. Or not.

Bring water to a boil, remove from heat and stir in sugar until dissolved. Store in a glass container and refrigerate for up to 2 weeks.
The Old Fashioned is widely considered to be the original cocktail. Consisting simply of a base spirit, sugar and bitters, it is most often made with whiskey. Our variation has a split base of gin and pisco.
The aroma of evergreen blossoms in the eau de vie are echoed in the botanical elements of the gin, reminiscent of springtime in a Norwegian forest. The pisco counters the Alpine flavors with subtle hints of wet earth and warmer climes, like vikings taking sail and clashing with pirates in the southern seas... Yeah, we know. We’re just obsessed with vikings and feeling generally “metal”.
It is crystal clear and delicate in flavor, but it is a spirituous drink. Sip on the bow of your victorious seafaring vessel under the moonlit sky.
